The story of “Claire’s” Overnight Oats!

This is the first time in 10 years that I’m blogging a recipe that is fully one of my kid’s creations! I’ve definitely created recipes inspired by the girls, but this one is all Claire. She was intrigued by the idea of overnight oats last year, and since it is a “cold breakfast,” we played around with different flavors a lot in the summer months. Turns out, she absolutely lives for a breakfast like this, and the flavor combo and ratios is all her. With so many overnight oats recipes on the internet, I wasn’t so sure about blogging ours. But, we ended up making this overnight oats recipe with a group of kids in a cooking class at her school, and every single middle schooler in the room inhaled the jar. I figured that was for sure a win, and worth blogging!

More than just oats!

Claire insists on this being a part of her breakfast on certain days of the week. She says her “hardest day of the week” is overnight oats day, claiming they help her think and stay full longer. I’m all about a kid being able to read her body like that, so we have rolled with it! I love giving kids the autonomy to chose a breakfast she knows works for her. When we created the base for our overnight oats, I made balanced macros a priority, so that no matter the flavor, we were covered in the protein, fat, and carb department.

Here’s the Line Up!

  • Sprouted Rolled Oats & Chia Seeds :: Slow burning carbohydrates packed with fiber and nutrients!
  • Hemp Hearts & Collagen :: These are the protein packed components in the overnight oats to satiate appetite and slow blood sugar. You can add protein powders as well, however typically Claire still wants scrambled eggs and sausage with her overnight oats, so she gets plenty from that.
  • Coconut Milk & Nut Butter :: Here’s where you’ll get the healthy fats for brain and hormone health.

Can I eat the chocolate peanut butter overnight oats warm?

Absolutely! I need a warm breakfast in the winter months of the year, so if I’m eating overnight oats, I’ll warm them in a sauce pan before eating them. Some kids might prefer the texture of cooked oatmeal versus cold, so it’s good to keep that in mind.

Are these chocolate peanut butter overnight oats a complete breakfast?

It really depends on your children’s appetites. This is a big jar of oats for a little one, so you might split it with yourself or siblings, and they will be good with that for a while. Other littles might enjoy having a side of hard boiled egg on the side. My 12 year old eats the entire jar as listed in the recipe card, plus scrambled eggs and sausage – all of it! As written, there is a good enough macro balance to sustain if your child is a lighter eater in the morning, or they are younger in age.

Let’s make chocolate peanut butter overnight oats :: Dry Ingredients

You’ll start by having your kiddo add all the dry ingredients into the jar, and stir them up. I have found this step to be helpful in making sure all the collagen powder gets stirred in evenly. Claire usually lines up her jars, and goes right down the line.

Have your tween or teen add all of the DRY ingredients to the jars.

Then, use a spoon to stir all of the dry ingredients together. This will help the collagen distribute evenly.

Next, add the wet ingredients

You’ll add the liquid (milk or milk alternative), peanut butter, and honey next. You can swap the peanut butter for seed butter or coconut butter if you cannot have peanuts! You can also swap the honey for maple syrup, or other natural sweetener like coconut or maple sugar if you wish.

Finally, stir up the overnight oats, and store in the refrigerator

Help your child stir the oatmeal up so that everything is distributed evenly, and put a lid on the jar. The oats will seem “runny” at this point, but they thicken up with time in the refrigerator – hence the “overnight” part of overnight oats! Claire does the entire process independently. She even has her own sticky note that she keeps in a special spot with the recipe on it!

Jar details!

My biggest suggestion before running out and buying a bunch of jars would be to just make the overnight oats in a cup or bowl, and make sure the kids like them first! Sure, a jar is super fun, but you don’t actually need a jar to make overnight oats. If it is something that gets your child excited about trying something new, it might be worth it, but for most cases, I say just use what you have. If you like the look and size of my Weck jars, you can find those here along with the kid friendly lids. I love the extra space at the top for adding bananas to this recipe. My oldest likes to make a mixed berry overnight oats with frozen fruit, and needs that extra space to fit the frozen fruit. I also like extra space at the top because inevitably kids stir vigorously sometimes, and the extra space keeps them from spilling!

  • Put the dry ingredients into your jar (oats, hemp hearts, chia seeds, collagen, and cocoa powder), and stir to combine.
  • Pour in the coconut milk, water, peanut butter, and honey, and stir to combine.
  • Put a lid on your jar, and store in the fridge up to a week.

Notes

  • It will take the overnight oats a few hours to thicken up in the fridge.
  • If you prefer warm oatmeal, you can dump your jar of overnight oats into a small sauce pan to warm up for a few minutes to eat hot.ย 
  • If you like to use peanut butter powder, you can swap the peanut butter for 2 tbsp unsweetened peanut butter powder.ย 
  • If you are nut free, you can use seed butter or coconut butter.
