Banana Bread
Everyone should have a good banana bread recipe up their sleeve. I find this to be the perfect gluten-free version.

- 5 ripe bananas
- ¼ cup whole milk if you are dairy free use whole coconut milk
- 1/3 cup melted coconut oil or melted butter
- Juice of ½ lemon
- 2-3 TB sucanat or organic pure cane sugar I think honey would work too
- ½ cup sorghum flour
- 1 cup tapioca flour
- 1 cup white rice flour
- 1 TB cinnamon
- 1 tsp aluminium free baking powder
- 1 tsp baking soda
- ¼ tsp sea salt
Blend the banana, butter, milk, lemon juice, and sucanat in a food processor, blender, or with hand held beaters.
Add the rest of the ingredients and blend until smooth.
Bake at 350 degrees in a small buttered (or coconut oiled) loaf pan for 60 minutes. Let the loaf cool a good 15 or so minutes before cutting.
