Simple Creamed Corn

Ingredients

  • 2 tbsp butter to cook in olive oil, pastured lard, avocado oil will work too
  • 1 small onion diced
  • 2 cloves of garlic minced
  • Pinch red pepper flakes
  • 4 cups frozen organic corn
  • ¼ cup King Arthur Gluten Free Flour Blend Most GF Flour blends should work here, or you can use Einkorn/wheat flour if you tolerate gluten
  • 1 ¾ cup coconut milk if you tolerate the dairy, you can use whole raw milk or cream
  • 2 tbsp nutritional yeast this gives a cheesy flavor and is optional. Parmesan cheese is also very good if you tolerate the cheese
  • 1 tsp sea salt
  • ¼ tsp black pepper

Instructions

  • Warm a skillet over medium high heat. Add the butter to melt, and then add the onion. Saute the onion about 5-6 minutes until soft and golden.
  • Add the garlic and red pepper flakes, stir to combine, and cook for 1 minute.
  • Add the frozen corn and gluten free flour. Stir to combine and cook for 1 minute.
  • Add the coconut milk, nutritional yeast, salt, and pepper. Stir to combine, and cook for 5 minutes or so until the sauce thickens.

Notes

  • Bacon is also so good to add to this. Cook the bacon before everything else and cook the onions in the bacon grease Add the crispy bacon back in at the end.
