Ingredients

  • 1/2 honeydew melon seeds scooped out, sliced off the rind, and coarsely cubed to fit into the blender
  • Juice of 2-3 limes to your taste. Start with 2 limes and add more if needed.
  • Pinch of sea salt

Instructions

  • Add the melon cubes, lime juice, and sea salt to a blender and blend until smooth.
  • Pour the melon/lime mixture into popsicle molds, add popsicle sticks, and freeze for minimum of 4 hours.

Notes

  • You can add raw honey to your taste if the kids are used to "regular" popsicles from the store that are significantly sweeter. Adding some raw honey would also allow you to add a more intense lime flavor with more lime juice.
  • I’ve been *loving* this silicone popsicle mold! It is so easy to get the popsicles out without having to run them under the water to wiggle them loose! You just have to push the end to pop them out. If you want bigger popsicles, this is a good 10-pop mold that we have used for years as well. If you have little ones at home, I used smaller popsicle molds like these for tinier toddler bellies!
  • To store your frozen popsicles, pull them out of the mold and wrap them in plastic wrap individually. That way, you can put all of the popsicles in a big freezer bag together without them sticking. This makes freezer storage simple, and the kids can go into the freezer to grab a popsicle themselves easily!
