Lake Michigan warmed up fast this summer, and my crew is absolutely here for it! Some days are calm as clear glass to float on tubes, and other days they can ride the waves all afternoon with the biggest smiles. I love that even at tween and teen ages they still giggle all the way into shore on those waves! It has been hot, hot, hot, too, which means…popsicles!
A kitchen classic from their toddler days!
I remember when the girls were super little, the little ice cream truck would make it’s rounds in our neighborhood weekly. I used to just hope that it came during naptime, but, inevitably, the ice cream truck driver must have known how to avoid naptime just to ensure allll the little ones ran to his ice cream loaded vehicle. There were a lot of popsicle flavors created in my kitchen during those summers! This simple lime green popsicle was a nod to the electric green dyed ice pops on the ice cream truck that intrigued my little ones at the time!

Because we are all doing that whole “know better, do better” thing these days, right? A decade ago, when I created this recipe, “dye free” was not as big of a thing. We know even more these days how food dye chemicals can effect our growing children’s brains and bodies, so I’m just thrilled to show you how to make these fun popsicles with real food colors!
My secret to getting the electric lime green color!
There are so many real foods that have fun, green colors. But for this application, I have found the light green color of a honeydew melon to be the best. Honeydew melon has a light, refreshing taste. It is sweet like it’s namesake, honey, but is mild enough that it picks up the strong lime flavors of a real lime too!
Let’s talk about the lime flavor too!
Limes are obviously a sour fruit, so it is important to get the right balance of lime flavor to melon sweetness. As my girls have gotten older, they appreciate a stronger lime flavor, so I tend to add a bit more than when they were younger. Play around with the ratios to your crew’s taste.
The Method :: Blending the fruit and lime juice
To get your popsicles started, you just need 5 minutes and a blender! Talk about the perfect summer treat! I’m all about no cooking and less kitchen time when that sun is out, so this is my kind of summer kitchen project. Just give the melon a coarse chop, add the lime juice, and blend it all up. At this point you can taste the mixture for sweetness and lime flavor, adjusting those to your taste.
The Method :: Freezing the lime green popsicles
Pour your melon/lime mixture into your popsicle molds, add the popsicle sticks, and freeze for at least 4 hours.
Let’s talk about popsicle molds!
I’ve been *loving* this silicone popsicle mold! It is so easy to get the popsicles out without having to run them under the water to wiggle them loose! You just have to push the end to pop them out. If you want bigger popsicles, this is a good 10-pop mold that we have used for years as well. If you have little ones at home, I used smaller popsicle molds like these for tinier toddler bellies!
Can I make the lime green popsicles sweeter?
As is, even my teenagers still think these lime green popsicles are the bees knees. If you have kids that are used to “regular” popsicles though, you may want to add some raw honey to sweeten them up a bit more. This will also allow you to add more lime juice if you want a more intense lime flavor. This is something you can play around with at the blending stage to your taste.
How to store your lime green popsicles
Once your popsicles are frozen, pull them out of the mold and wrap them in plastic wrap individually. That way, you can put all of the popsicles in a big freezer bag together without them sticking. This makes freezer storage simple, and the kids can go into the freezer to grab a popsicle themselves easily!
The *BEST* Real Food Lime Green Popsicles!
Ingredients
- 1/2 honeydew melon seeds scooped out, sliced off the rind, and coarsely cubed to fit into the blender
- Juice of 2-3 limes to your taste. Start with 2 limes and add more if needed.
- Pinch of sea salt
Instructions
- Add the melon cubes, lime juice, and sea salt to a blender and blend until smooth.
- Pour the melon/lime mixture into popsicle molds, add popsicle sticks, and freeze for minimum of 4 hours.
Notes
- You can add raw honey to your taste if the kids are used to “regular” popsicles from the store that are significantly sweeter. Adding some raw honey would also allow you to add a more intense lime flavor with more lime juice.
