Just 3 ingredients and 5 minutes is all you need to get this rich and tasty fudge ready for the party!

The last week of school before the Christmas break…
Anyone with kids in school knows that the the last week before the holiday break is capitol C.r.A.z.Y! With holiday concerts, holiday parties for the classroom/sports teams/clubs, family gatherings, and just in general getting ready for the big day, it’s no wonder sometimes things get forgotten, or just need a little shortcut. I am sharing *the* shortcut that I have been using for the last minute classroom and team parties for years…and it takes just 5 minutes of hands on time to put together!

Just 3 ingredients?!
I know, right?! Well, 4 counting the salt, but truly you will just need these 3 items from any grocery store, and in 5 minutes your fudge will be in the fridge to set up! The sweetened condensed coconut milk is literally just coconut milk and sugar. Yes, sugar. It is a special occasion treat, after all! The condensed milk helps the fudge have the best, soft texture – the kind of bite that leaves teeth marks that you are looking for in a rich fudge. You can pick whatever chocolate chips you like to use as well. Since the condensed coconut milk is sweet enough, I like to use dark chocolate chips.

The Method :: The 5-Minute Fudge Base
Melt and stir. Yep. That is literally it! Just gently melt the condensed coconut milk, butter, and chocolate chips until it is smooth. Then you can pour it into a square baking pan.

Tell me about that baking pan!
These silicone baking pans are such a game changer! Everything just pops right out without having to oil, spray or line with parchment paper! If you are planning to use what you have though, any square baking pan will do. Just be sure to line it with parchment paper so that you can lift it out of the pan to cut the pieces of fudge.


Planning ahead…
So these classroom parties at the end of the week really can sneak up on you! So I tend to make these days in advance and just keep the fudge in the refrigerator until I’m ready to slice and display. My girls *love* being able to use a pretty, festive cake stand for the presentation, but any serving tray or candy display will work!

Fast & Easy 5 Minute Fudge
Ingredients
- 1 -11.25 ounce can sweetened condensed coconut milk See Notes
- 2 tbsp butter use coconut oil if dairy free
- 3 cups chocolate chips of choice See Notes. I used THESE.
- 1/4 tsp sea salt
Instructions
- Put all of the ingredients into a sauce pan over low/medium heat, stirring until everything is gently melted.
- Pour the melted fudge mixture into an 8×8 or 9×9 inch silicone pan. {If you are using a regular square baking pan, line it with unbleached parchment paper first so that once it hardens, you can pull it out to cut the pieces up.)
- Let the fudge solidify in the refrigerator for 2 hours before cutting into the size pieces that you want. I have put it in the freezer to freeze quicker and it does help! This is super rich fudge, so I tend to shoot for pretty small, 1 or 2 inch cubes.
Notes
- I have found the sweetened condensed coconut milk at the grocery store here. Or you can get it online. Regular condensed milk will work – just watch the ingredients. Also, if your can of condensed milk happens to be more like 14 ounces, this recipe will still work! The fudge will be slightly softer, which I really love, but it still firms up very well and works great!
- I like to use these allergen friendly dark chocolate chips. Just keep in mind that the condensed milk is pretty sweet, so a milk chocolate or even semi-sweet chocolate chip is going to be pretty sweet!
