It’s the first week of school, and boy, oh boy, do we ever kick everything off this week! Not only did high school start for my older 2 and college classes for my oldest, but my youngest has gone back to her evening practices instead of morning summer practices, and we get 2 cross country meets for the older two in one week! Whew!

How in the world are we supposed to keep real food on the table during busy seasons like this? I’ve got a few tricks up my sleeve! Because, in all honesty, it matters even more when they are pulling schedules like this. Have real fuel that actually helps them thrive is the goal, and you really can do it without being in the kitchen all day.

The Sheet Pan Solution!

I’ll never forget the school year that sheet pan meals became my BFF. It was the first year that all 3 of my kiddos all of a sudden had after-school fun to partake in. I was not about to compromise the years of effort that I had put in feeding them nourishing meals every day. I started relying on some of my favorite sheet pan concepts, and a rotation was born! A whole dinner on one pan? Sign. Me. Up!

Prep ahead tips for even more time savings!

These sheet pan dinners are no good to your schedule if you are spending a bunch of time preparing the food for the sheet pans! Here are some of my hacks!

If the dinner bowl has a sauce, prep it on the weekend or prep day.
If the chicken needs a marinade, prep it on the weekend or prep day. You can even get the chicken into the marinade, into a freezer bag, and into the freezer if that helps!
Do your veggie chopping the night before, or on the weekend or prep day. I very often will chop veg the night before, and pop it into the fridge. It dumps onto the sheet pan easily when it is time to cook!
If you plan on rice or pasta with your dinner bowls, prep this ahead too if you want! I usually prep these items while the sheet pan is in the oven, but I definitely double or triple rice batches so that we can pull from it all week for other meals too.

Let’s talk about my favorite sheet pans!

A few years ago, I replaced the sheet pans from my wedding (over 20 years ago!) with new, larger, and non-toxic sheet pans. I *love* them! And they are so worth it. YOU are so worth getting something that makes dinner prep so much easier too! My biggest piece of advice for these ceramic non-toxic pans is to wipe them with a soft cloth and warm water after use. Dish soap and scrub brushes will ruin them. They clean up so nicely with just some water and a microfiber cloth.
