That sweet summer switch!
We *finally* had our first beach day a couple weeks ago, as Lake Michigan seems to have made her move from winter waters to that summer glow! And we are here for it! And momma is also here for more summer-like meal plans, so I’m going to share a super spoon lick-able sauce and dressing that my crew has been obsessed with.

But it’s…green!
I know it. But hang tight with me, because the flavor on this sauce has my kids reaching for this over Ranch dressing every time it’s in the fridge together! And that is pretty incredible! The components of the dressing and sauce might not seem kid friendly, but once they are all together, and drizzled on a dinner bowl or favorite salad, they become irresistible. I actually think it is the sweetness that comes from the spring green onions that tame the punchiness of the herbs to make the best combination.

What does green goddess dressing taste like?
It’s a little fresh, and a little savory. A little zingy, and super sauce and creamy. You can blend it all the way through to a smooth puree, or leave little speckles of the herbs polka-dotting throughout. It is so versatile to enhance any dish from rice bowls and chicken dishes to salads and veggie dipping.

A quick summertime prep!
Just 5 minutes is all you need. That’s do-able for summer schedules, I’d say! Simply dump all the ingredients into a bullet blender or food processor and blend it to your liking. You can use the water ingredient to make the sauce as saucy as you like, or use less to make it thicker and dippier!

How to store the green goddess dressing and dinner sauce
You can store the green goddess sauce in any jar or container with a lid. If you love a more classic salad dressing bottle, they make a great investment to keep around for salad dressing creations. I tend to keep squeeze bottles around for sauces and dips too!

How to serve the green goddess dressing and dinner sauce
It doesn’t get any more versatile than this! I have watched my girls grab for this sauce to add as a sandwich spread, and also to drizzle over rice bowls for a school lunchbox. It makes a great veggie dip as well as salad dressing too.
