One of my favorite photos…

When I saw the strawberries on sale for Valentine’s Day last week, I just knew I had to grab some up to surprise the girls. By this point of the winter, the mid-February snow and cold has us all longing for a little taste of summer! Our Michigan lakeshore grows some of the juiciest, most delicious summer strawberries around. You’d never know that these grounds were piled high with snow just a few short months before. My girls are mostly teenagers now, but this photo is from one of the first years I took them strawberry picking where they actually knew what was going on. It is such a precious memory!

A fun strawberry fruit dip to remind us of summer!

We created this strawberry fruit dip last summer while I was in the middle of developing recipes for my newest cookbook, Nourished Mornings. I didn’t end up having room to fit into the cookbook, but the girls just loved the recipe. It is super versatile depending on your taste and what you have on hand, so you can make it however it works for your family. It makes for a fun treat or breakfast fruit dip side!

Let’s talk about the natural strawberry flavor and color!

I like to use freeze dried strawberries for the flavor and the color. This condensed powder makes for a potent strawberry flavor. Instead of blending up fresh strawberries that will make the dip runny, this dried strawberry powder allows you to use more strawberries in the mix so it really tastes like strawberry, and gives is a super pretty, natural pink color too. You can truly use as much as you want. My girls loved the “aesthetic” of the light, blush pink. If you use more, it will not only be brighter in color, but have more strawberry flavor. (Note that the Anthony’s Freeze Dried Strawberries pictured below is no longer available. They make Dragonfruit powder now, which would make a pretty dip too! There are lots of different brands though, and I have had this bag for over a year – it lasts long!)

The Method :: Mix the powders into the yogurt

To get started, you’ll want to get your favorite yogurt and mix that with the strawberry powder. You can add grassfed collagen for added gut nourishment, but the collagen is optional if you don’t have it. I have also used vanilla protein powder with success if you want to add some flavor and protein. I have found a whisk mixes the powders in more completely than a spoon or spatula.

The Method :: The Whipped Cream

This is where the “fluff” comes in! For a fluffy dip, use as much of the whipped cream as you wish. You can either make your own whipped cream using raw cream or quality cream along with raw honey or maple syrup (see my homemade whipped cream recipe here!), or you can use CocoWhip if you are dairy free. I don’t always have access to good cream, so the CocoWhip works well for us. Fold the whipped cream into the pink yogurt mixture, and then refrigerate. (Our regular grocery stores carry CocoWhip and I buy and freeze it when it is on sale!)

How to adjust your strawberry fruit dip to your taste

If you want your dip more tangy, use more yogurt. If you want the dip less sweet, use less whipped cream, or make your whipped cream less sweet. As it is, the CocoWhip is just a couple grams of sugar per serving, so it isn’t overly sweet. If you use a vanilla protein powder, the sweetness will be amped up more. When using the fruit dip for more of a breakfast side versus a treat, this might be the way to go so that you can use less sugar. If you are using it as a special treat like I plan to use for Valentine’s Day, go ahead and don’t be shy on the whipped cream!

How to store the strawberry fruit dip

The dip will last for as long as the date on your yogurt and whipped cream state. Up to a good week at least. Use an airtight container to keep it in the refrigerator. You could also freeze portions into my favorite freezer Souper Cubes so that you can have fruit dip on hand at all times!
