Summer starts…NOW!
We are perfectly giddy not only that school is finally out, but that the most incredible Michigan summer weather is here to stay for the next few months! That powdery Lake Michigan beach sand is in between our toes whenever we can, and even though the water is still warming up, my Michigander crew doesn’t mind a little 50 degree cold plunge to play in the water. We have also been enjoying all the warmer weather fruit, and I have a fun little breakfast that is quick and cool to share with you! Perfect for a warm summer morning!
A classic packet oatmeal flavor make-over!
I always, always reached for the peaches and cream packets in those little boxes of fruit and cream instant oatmeal boxes! It is one of my favorite oatmeal flavors. We love a good overnight oats breakfast during the warmer summer months, so this little jar is packed with those same peaches and cream flavors in a cool and creamy little jarred package.
A little overnight oats ingredient change up!
While the concept of overnight oats is such a fun real food idea for breakfast, it is really nice to change things up once and while to get some different nutrients into everyone. This overnight oats base is a combination of oats and buckwheat groats. The buckwheat groats soften but still have a slight bite to them, so the texture is great for those that might like a little more texture to their overnight oats. It also brings a different nutrient profile to the mix, as buckwheat is a complete protein!
How to make peaches and cream overnight oats
To get your little jar of breakfast ready, stir up the dry ingredients right in the jar. Then add the wet ingredients (and, of course the peaches!) into the jar and stir it all up. The beauty of making your own peaches and cream oats is adding as many peaches as you want! And when those yummy, juicy peaches are in season, you want to pack in as many as you can!
How long will it be before the peaches and cream overnight oats are ready to eat?
Once you get your jar or jars ready for the refrigerator, you’ll want to let them soak up all the flavors and liquid for a good hour our so. Hence, the “overnight” part of overnight oats! This is a make-ahead breakfast. You can make as many jars of them as you wish. In fact, I encourage you to make enough for a good 5 days, because they last that long in the refrigerator, and you won’t have to think about what to make for breakfast all week!
How to serve the peaches and cream overnight oats
As is, these overnight oats make for a pretty balanced breakfast. Older kids, teens, and adults might find that they need more protein. So you could either add vanilla protein powder to the overnight oats, or you can serve boiled eggs and/or chicken sausage on the side.
Tell me about those jars!
I have a collection of Weck jars that I have an obsession with that make for great overnight oats storage. My favorite 2 sizes are the 12.5 ounce and the 17 ounce because there is enough room left at the top for kids to stir things up without making a mess, or for topping with extra fruit. I also use these easy to use and wash lids for both of those size jars. Really, any mason jar or storage container with a lid will work though! Use what you have.
Does the peaches and cream overnight oats work with frozen or dried peaches?
Frozen peaches work well in this recipe. So even if it isn’t summer, you could enjoy this yummy breakfast and remind yourself of warmer months ahead! You could even warm up the overnight oats if it is in the colder months of the year. We have dried this recipe with these little “Ugly dried peaches” that I found at Sam’s Club, and we didn’t love the texture. The dried peaches soak up the liquids and become a little rubbery. My suggestion would be to stick to fresh or frozen.
Peaches and Cream Overnight Oats
Ingredients
- 1/3 cup rolled oats I use sprouted oats for best digestion
- 2 tbsp buckwheat groats
- 2 tsp chia seeds
- Pinch of sea salt
- 1 scoop grassfed collagen optional
- 1/2 cup coconut milk, raw milk, or yogurt of choice
- 1/4 cup water or more milk
- 2 tsp raw honey
- Splash of vanilla extract
- 1 small peach pitted, and cubed into bite sized pieces
Instructions
- Put all of the dry ingredients into your jar (oats, buckwheat groats, chia seeds, collagen, salt), and stir to combine.
- Add the milk, water, honey, vanilla, and chopped peaches and stir to combine.
- Put a lid on your jar and store in the refrigerator to thicken. This will take up to an hour. Make them up the night before and they can be grab-and-go breakfast for up to a week right from the refrigerator!
Notes
- If you want to use a vanilla flavored protein powder, you could add this in with the dry ingredients and most likely skip the honey for sweetener if your protein powder is vanilla flavored and sweetened.
- If you want to leave out the buckwheat groats, you can use all oats instead, but use 1/2 cup total oats.
